The origin of the galette des rois goes back to the ancient festival of saturnalia, that was held to celebrate the winter solstice in roman times.
Over the course of a day, roles were reversed, in honour of the god saturn.
A bean was hidden in a cake and lots were drawn for a slave who became “king for a day”, and all his wishes were granted.
Mix all the ingredients for the dough, except the water, to obtain a dry dough with a uniform, crumbly texture.
Then add the water and mix on low speed to obtain a homogeneous dough without kneading it.
Roll the dough out into a square shape of 40 x 60 cm, put it on a baking.
